Tindora is a vegetable which is popular in most parts of India, and it is known by names Ivy Gourd or Gentleman's Toes in English, Dondakaya in Telugu, Kovakkai in Tamil. It is also called as baby watermelon, because it resembles like watermelons. Tindora can be cooked by itself or with other vegetables like potatoes. Today I am going to show a very simple yet delicious Tindora fry. If you have never tried it then this would be the best recipe to taste. Now, lets get started.

Ingredients:

Tindora 4 cups (cut in desired shape)
Garlic paste 1 Tbsp
Red chili powder 1 tsp
Cumin powder 1 tsp
Corriander powder 1 tsp
Tandoori masala 1 tsp
Oil 4 Tbsp
Salt To taste
Turmeric powder 1/2 tsp

Method:

Heat oil in a pan, add all the masalas listed above and cook in a low flame. Add tindora and mix well.

Cook for a minute and add garlic paste to the tindora.

Close the pan with a lid and cook for 15 minute on a medium heat, keep stirring occasionally. Once the tindora starts  turning tender, add some salt and continue frying for 4-5 minutes without covering the pan with a lid until they start changing their color. Once its done transfer it to a serving bowl.

Serve Hot with chapati, paratha or rice.

Tips:
  • Do not add water.
  • While adding masalas to the oil make sure the heat is on medium heat.
  • Do not burn the masalas after adding it to the oil.
  • You can add garlic paste with the masalas too.
  • Use generous amount of oil.
