Milk Kesari | Paal Kesari | Milk Halwa

Milk Kesari is made by cooking sooji in milk as the usual kesari (halwa) is made by cooking the roasted sooji in water. My mom usually prepares kesari with milk rather than water. This Kesari recipe is made for any festivals or pujas at home.

Ingredients:

1/2 cup Sooji / Rava
1/2 cup Sugar (if you like your kesari to be more sweeter then add 1/4 cup extra)
1-1/2 cup Warm Milk
1 tsp Powdered Cardamom (Elaichi)
3 tblsp Clarified Butter (Ghee)
Yellow Food Color / Saffron
1 tblsp Cashews
1 tblsp Raisins

Method:

  • Heat ghee in a pan.
  • Roast the cashews and raisins. Set aside to cool down.
  • In the same pan roast rava until nice aroma rises.
  • Add milk little by little and keep stirring constantly.
  • Make sure it doesn't burn as the milk tends to stick to the bottom of the vessel.
  • Add sugar and sugar and stir well.
  • After adding the sugar the chaser tends to get runny, but later it tends to thicken.
  • Now add the cardamom first and stir well.
  • Add in the food color or saffron and the roasted dry fruits.
  • Mix well and serve warm.
