Palak Paneer

Palak Paneer is a North Indian dish consisting of spinach(palak) and cottage cheese(paneer) in a thick, curry sauce based on pureed spinach(palak), with garlic and garam masalas.
Ingredients:
2 bunches Spinach (Palak)
1 cup Cottage Cheese (Paneer)
1 big Onion
2 small Tomatoes
5-6 Green Chilis
1 tblsp Ginger Garlic Paste
A pinch of Turmeric
1 tsp Red Chili Powder
1 tsp Garam Masala Powder
1 tsp Fenugreek Leaves
3 tblsp Oil
1 Cinnamon Stick
3 Cloves
1 tsp Cumin Seeds (Jeera)
1 tblsp Fresh Cream
Method:
- In a pan , add washed spinach(palak) and fry until it reduces its volume. (the water in the leaves is enough to make it shrink)
- Transfer it into a place and set aside, let it cool down.
- Grind it into a smooth paste.
- Heat pan with oil and add cinnamon, cloves and cumin seeds.
- Fry for a minute or two.
- Add onions and fry until they are translucent.
- Add the ginger garlic paste and green chilis. Fry for a minute.
- Add the tomatoes and cook until they turn mushy.
- Now add turmeric, red chili powder, garam masala powder and salt.
- Cook for 2 minutes.
- Add the ground palak paste to the cooked tomatoes.
- Cook on low heat for 4-5 minutes, until the oil separates and spinach(palak) cooks well.
- Add fresh cream and bring it to boil.
- Mean while fry paneer until golden brown and set aside.
- Add fenugreek leaves to the cooked spinach(palak).
- Add cottage cheese(paneer) to the palak gravy and mix well.
- Serve hot with roti or naan.
