Medhu Vadai is a traditional south indian cuisine which is not only made as a breakfast in day to day life but also mostly on festivals and puja days. Grinding the batter with enough water to make a soft but not watery dough is important as the consistency of the batter that determines how soft and shape of the vadas turn out. Well, after all "Medhu" means soft.
I still remember those days of childhood when myself and my sister used to see mom grinding the vada batter in a rock grinder with her hands. Trust me the taste differs when you grind it in a wet grinder and if you grind in the rock. My mom used to make vadas with her hand and finger tips, which was less messy. Well, I had to try a lot to make a vada like that. We used to wait until the puja is done and when mom used to ask us to taste the vada. Well take care to make the vadas as soon as the batter is made, as they will absorb too much oil if left to ferment.

Ingredients:
Cook Time : 15-20 min | Makes : 20 Medium sized Vadas2 cups Medhu Vada Batter (click here for medhu vadai batter)
2-3 Green Chilis
2 inch piece Ginger
2-3 tblsp Coriander Leaves (chopped)
2 pinches Asafetida
Salt to taste
Water as needed
Method:

- Chop green chilies, ginger and coriander leaves and add all these to the batter with salt and asafetida.
- Mix well and set aside.
- Heat oil in the kadai. Make sure that there is enough oil or else the vadas may stick to the bottom.
- Banana Leaf Or Polytene Sheet Method:
- Wet your hand and also the Banana Leaf (Polytene Sheet).
- Take a portion of batter and place it on the banana leaf (polytene sheet).
- Now make a hole in the middle with your finger.
- Lift the banana leaf (polytene sheet) and flip it on your hands. (make sure your hands are wet, so its easy to drop the vadas in the oil)
- Again make a hole in the middle with your thumb and upturn your hand drop the vada in the oil slowly.
