Egg Bhurji Or Anda Bhurji Or Muttai Masala Poriyal / Egg Recipes
Wednesday, June 26, 2013Egg Bhurji or anda bhurji or muttai poriyal, is a popular dish in India. It is very easy and a quick recipe. I love to have it with Rasam. It is great for days when we don't have any vegetables in our refrigerator or when we are very tired to cook and need something quick. It can be served any time of the day with plain rice, bread, roti, naan or paratha. Here I am going to make a Basic egg bhurji with onions and green chili's. Lets get started.
Ingredients:
| Eggs | 4 |
| Onion | 1 large |
| Green Chili's | 3 finely chopped |
| Ginger garlic paste | 1 Tbsp |
| Red chili powder | 1 tsp |
| Coriander powder | 1 tsp |
| Garam masala powder | 1/4 tsp |
| Salt | As per your preference |
| Cilantro | 1 Tbsp |
| Oil | 1 Tbsp |
Method:
Heat oil in a kadai, add onions, green chili's and ginger garlic paste. Saute for a minute until the onions are translucent. Add red chili powder, coriander powder and garam masala. Now add the eggs directly to the kadai. If u are not really good at it, then you can beat the eggs in a separate bowl and add it to the kadai.

Tips:
- You can add more green chili's for more spiciness.
- Also vegetarians can replace eggs with paneer and follow the same instructions and ingredients.
- You can also add tandoori masala for more flavor and taste.
- You can exclude garam masala, if u don't like extra spice.
- Do not add water because its a dry dish to serve.
