Well, there are different varieties of Egg Curry. Today I am going to share a simple yet spicy egg curry recipe, by frying the boiled eggs before I drop into the curry. Well, you can omit frying the eggs if you don't like it crispy. My mom is a vegetarian so, we have eggs once in a while, not regularly. But since I shifted to USA most of my room mates and other friends used to prepare egg dishes at least 4 times a week. This was because most us had no idea how to cook. Trust me until I met Jeet I had no idea of how to make food other than cooking rice, rasam and egg. This was and is my favorite egg dish ever. So, lets get started.
Egg Bhurji or anda bhurji or muttai poriyal, is a popular dish in India. It is very easy and a quick recipe. I love to have it with Rasam. It is great for days when we don't have any vegetables in our refrigerator or when we are very tired to cook and need something quick. It can be served any time of the day with plain rice, bread, roti, naan or paratha. Here I am going to make a Basic egg bhurji with onions and green chili's. Lets get started.
