Spicy Chicken Curry / Non Vegetarian Recipes

Thursday, June 27, 2013

India has many regional variations especially when it comes to Cuisines, one of them is the chicken curry. The recipe which I am going to share with you all, is one of my mom's best recipe's. Though my mom is vegetarian by birth she loves cooking non-vegetarian dishes for Us. The aroma when she starts cooking this recipe is just mouth watering. She is an amazing cook. This chicken curry is not fancy one, yet simple and quick to make. The spice level of this dish is a bit high due to chili powder and garam masala. So, lets get started.

Ingredients: (Serves 2)

Chicken Boneless 2 lb
Onion 1
Tomato 1
Red chili powder 1/2 Tbsp
Tandoori masala 1/2 Tbsp
Corriander powder 1/2 Tbsp
Cilantro 1 Tbsp
Salt As per your preference
Oil 2 Tbsp
Ginger garlic paste 1/2 Tbsp
Green chili's 3

To Marinate:

Yogurt (Curd) 3 to 4 Tbsp
Turmeric powder 1/2 tsp
Ginger garlic paste 1 Tbsp
Red chili Powder 1/2 Tbsp
Garam masala powder 1/2 Tbsp
Salt 1 tsp

Method:

Wash and drain chicken in cold water. Marinate chicken with all the ingredients listed above. Set aside the marinated chicken for an hour.

Heat oil in pan, add onions and let it cook until its translucent. Now add ginger garlic paste, green chili's and cook until the raw smell is gone. This might take 2-3 minutes. Add tomatoes and cook for a minute or two.

Add all the masalas, salt and mix well. Now add the marinated chicken with two cups of water (depending on how thick you want the curry).

Once you add the water lower the temperature to medium heat and cook for 15-20 minutes, until you can see the curry, leaves oil on the top. After its done garnish with cilantro and serve with rice, paratha or chapati.

Tips:
  • You can add mint leaves or dry fenugreek leaves for rich taste.
  • For chicken curry without gravy, omit adding water. Just cover the chicken and cook for 15 minutes until it leaves water itself. For this you need extra oil.
  • Adjust the spices according to your choice.
  • For more flavor you can add fresh coconut paste and lime juice to the curry.
