Indian Vegetable Stew

           Stew is basically combination of vegetables cooked with coconut milk. Thanks to my mom who used to make us eat vegetables by making stew which we used to love. This is my mom's recipe, well there are lot of variations to make vegetable stew. It is mostly cooked with coconut milk. You can even add some grated coconut to it for more flavor. It's a healthy dish.  This is a one pot recipe and you can even pressure cook it.So lets get started.


Ingredients:

Coconut milk 1 cup
Coconut grated 3 Tbsp (For more flavor)
Oil 2 Tbsp
Cumin seeds 1 tsp
Cloves 3 to 4
Cinnamon 1 stick
Ginger garlic paste 1 Tbsp
Onion 1
Green chili's 3
Turmeric powder 1/2 tsp
Red chili powder 1 tsp
Salt to taste
Coriander powder 1 tsp
Beans 4 to 5
Carrot 1 big
Peas 1/2 cup
Potato 1 big
Cauliflower 1/2 cup
Paneer/Indian Cottage Cheese 0
Tomato 1 big
Plain yogurt 1/2 cup





Method:





Heat oil in pan or pressure cooker, add cinnamon, cloves, cumin seeds and let it splutter. Add ginger garlic paste, onions, green chili's and cook until the onions are translucent. 



Add turmeric and red chili power. Then add the tomatoes and cook until they are soft.



Now add the coconut milk, grated coconut, all the vegetables, water and mix well. Pressure cook it until 2-3 whistles.



After the pressure is down, cook it on low flame and add coriander powder, plain yogurt to it. Mix well and cook it for 2-3 minutes. Turn of the heat and transfer it to a serving bowl.



Garnish with cilantro and serve it with roti, paratha or plain rice. 

Tips:
  • If you don't have coconut milk just add the grated coconut.
  • Coconut milk is available in any grocery stores.
  • Any vegetables can be added or omitted.
  • Make sure to add the yogurt, do not skip it.
  • Paneer is optional.
  • You can even add tofu.
  • To make the stew thick boil for longer time.
  • If you are cooking in pan after adding all the ingredients cover it and bring it to boil on a low flame until the vegetables are cooked.
