Nankhatai is a biscuit of Indian origin from the roots of Surat, Gujarat. It is an Indian tea time cookie which is very easy to prepare. We can find it in most of Indian groceries. In India it is mostly sold in bakeries. This yummy and sweet recipe is a good snack time recipe for all age groups. So, lets get started.
Ingredients:
| Wheat flour | 1/2 cup |
| All purpose flour/maida | 1/2 cup |
| Sooji/rava | 1 Tbsp |
| Besan | 1 Tbsp |
| Cashew powder | 1/4 cup |
| Sugar | 1/4 cup |
| Cardamom | 1/2 tsp |
| Butter | 1/2 cup |
| Milk | 2 Tbsp |
Method:
Preheat the oven to 350 degree F. Take wheat flour and all purpose flour in a bowl. Add sooji, besan, cashew powder, cardamom powder, sugar and mix all the dry ingredients. Add 1/2 cup butter and knead a smooth dough. Add milk if needed to knead the dough.
After kneading into a smooth dough, make equal sized balls and place it on a non-greased Baking tray.
Place cashews or almonds gently on the dough balls. Place the baking tray into the pre heated oven and bake until 8 minutes. After 8 minutes lower the temperature to 200 degree F and bake until 10-15 minutes. Then remove the baking tray.
Flip to the other side and make sure its brown on the bottom if not bake for 4 minutes. After flipping, place it in the oven and bake until 8-10 minutes. You can feel the aroma all over your place. After 10 minutes take out the nankhatai's from the oven and serve it after it's completely cool down.
Make sure to store it in air tight container and enjoy.
