Sev is essentially small pieces of crunchy noodles made of chickpea flour paste, which is seasoned with salt, turmeric and red chili powder. Sev (noodles) are actually shaped with the sev machine. This utensil is available in most of the Indian grocery stores. It is a popular variety of Indian Snack Food. Sev is generally used to garnish any Chat Items or Chat Recipes. There different varieties of sev, thin sev , thick sev and nylon sev. Today, I am going to show you the thin sev recipe with and without red chili powder. So, lets get started.
Ingredients:
| Gram flour/ chickpea flour | 1 cup |
| Turmeric | A pinch |
| Red chili powder | 1/4 tsp |
| Salt | To taste |
| Water | As needed |
| Oil | 1 Tbsp and To deep fry |
Method:
Take 1 cup of gram flour and add turmeric and red chili power (At this point you can add or omit red chili powder). Mix all dry ingredients and add 1 tablespoon of oil to it, mix well. Add desired amount of water little by little to knead the dough.
Dough might be very sticky but make sure you add water little by little to make a soft dough. Add oil to your palm and knead it until smooth.
Take a sev maker and select a thin sev plate. Make sure to grease the sev maker with oil before placing the dough in it. Place the dough carefully and close the sev maker.
Heat oil in a kadai and press the sev maker firmly in such a way that, it forms circle. But do not overlap.
Turn carefully immediately and cook until the bubbles ceases.
Take out carefully using a fork as shown in the picture so that sev doesn't break. Place it on a paper towel and repeat the process.
This is the difference between with and without red chili powder.
Make sure to keep it in air tight container and it goes long way.
Tips:
- To stop the dough flow from the sev maker turn it in opposite direction.
- Once you start frying the sev flip immediately, because it takes very less time to cook.
- If it is difficult to press the sev maker then add some water to the dough and make it really soft.
- Before pressing the dough into the oil for the first time make sure that the oil is heated just right.
- To check the oil is in right temperature, just add a pinch of dough into it , and it should immediately.
- Do not heat the oil until it's fuming.
