Ingredients: (100 Puris)
1cup Sooji Or Semolina
1 teaspoon Baking Powder
Salt to taste
Luke warm water
1-1/2 teaspoon of Maida Or All Purpose Flour
Oil to Deep Fry
Method:
Take luke warm water in a bowl and add baking powder to it. Mix well and add 2 Tablespoon of baking soda to the sooji.
Since sooji absorbs all the water we need to add 2 teaspoons of maida to it and make a dough. Add some oil and knead the dough for another 3 minutes. Make sure the dough is not soft.
Cover the dough with clean damp cloth and rest it for 15-20 minutes. Then take desired amount of dough and roll it on your work surface. Make sure to roll it as thin as possible. while rolling it, do not add any flour. Just add some oil on to your work surface and roll it.
Cut them into desired shape with cookie moulds or any small cup, which has sharp ends. Place all on a sheet or a plate.
Heat oil in a pan. Once the oil it heated turn it into low flame and deep fry the puris. As you drop the puris it would tough the bottom of the pan and instantly blow up like baloons. Take them out on a kitchen towel and let them cool down before you serve.
