Bagara Rice is a spiced rice delicacy prepared in Hyderabad, India. Bagara means ' Tempering '. It's basically an easy peasy plain Biryani recipe without any vegetables and whole garam masalas. This Bagara rice can be served with Bagara baingan or dalcha. It is also a popular rice dish in weddings or functions in Hyderabad apart from Vegetable Dum Biryani.
Ingredients:
Preparing Time: 10 minutes | cooking Time: 30 minutes | Total Time : 40 minutes | Serves 2-3
1-1/2 cups Basmati Rice
3 cups Water
1 Onion (sliced lengthwise)
1 tbsp Ginger Garlic paste
2-3 Green Chilies (crushed)
10-15 Mint Leaves
Handful of Coriander Leaves
1 inch Cinnamon
2-3 Cloves
1 Bay Leaf
1 tsp Shahjeera (black cumin seeds)
2 tbsp Oil
Salt to taste
Handful of Fried Onions
Method:
- Wash and soak basmati rice in water for 10 minutes.
- Heat oil in a pan.
- Add shahjeera and let them crackle.
- Add cloves, cinnamon, bay leaf and fry them for a minute.
- Add thinly sliced onions and fry until they are translucent.
- Then add the ginger garlic paste and crushed green chilies, fry well for a minute.
- Add water, salt, mint leaves, coriander leaves and bring it to boil.
- Add rice and again bring it to boil.
- When the water tends to decrease, cover it and simmer for 10-12 minutes.
- Once done garnish rice with fried onions and serve hot.
