Eggless Mango Custard (without custard powder)

Custard is a variety of culinary preparations based on cooked mixture of milk and cream. Depending on  the thickness custards may vary in consistency from a thin pouring sauce to a thick pastry cream. Today I am sharing a custard recipe which is eggless and very easy to cook.

Ingredients:

Preparing Time: 5 minutes | Cook Time: 20-25 minutes | Total Time: 30 minutes | Serves: 4-5

2 cups Mango Puree
1 cup Whole Milk (preferably chilled)
1 cup Heavy Cream (chilled)
3 tbsp Cornstarch or Corn Flour 
1 cup Sugar
1/2 tsp Vanilla Extract 
 Handful of Dry Fruits of your choice 
Fruits of your choice to serve.


Method:



  • In a large bowl, mix cold milk, cream and the cornstarch.
  • Whisk it until the cornstarch is completely dissolved.


  • Heat the pan and pour the milk mixture in it.
  • Whisk continuously until the mixture is warm on low to medium flame.
  • Once you start to see the bubbles on the sides, reduce the heat to low and whisk continuously.
  • At this point the mixture tends to thicken fast, so keep a watch on it.
  • Once the milk mixture is thickened, add the mango mango puree..
  • Whisk and cook for a minute,
  • Add the sugar and whisk for 2 more minutes.
  • Once the mixture is well blended, switch off the flame and set aside.



  • Add the vanilla extract, mix well and let it cool down for few minutes. (around 5-10 minutes)
  • Strain the mixture with the strainer in a bowl, so there are no lumps formed.
  • Once strained add the dry fruits of your choice.
  • Chill the mango custard in the refrigerator for 6-7 hours or overnight.
  • Serve it with fresh fruits of your choice.
